Chicken a la King is one of my favorite winter comfort foods. You can serve over biscuits, egg noodles, or rice. My personal favorite is biscuits!

This recipe was introduced to me by a friend of my mom’s years ago and was originally Turkey a la King. I loved it so much I wanted to eat it more often but I don’t care for turkey. Once a year is too much for me. So I switched it up to chicken and made a few tweaks here and there and made it my own. With Thanksgiving right around the corner, you’ll want to save this recipe to use for all those turkey leftovers you’ll have later next week!
Last year my husband worked on Thanksgiving so he sent my mom and me to eat at the Keg for Thanksgiving. We were supposed to order their special Thanksgiving Dinner. I’ve never eaten anything there except the steak and it’s my all time favorite place to go for special occasions. I know my mom doesn’t care for turkey either so we asked the waitress if they were still serving their regular menu on Thanksgiving. They were! So we ordered steak instead and it was so delicious! Best Thanksgiving meal ever! My husband was disappointed we couldn’t tell him how the Thanksgiving meal was! This year my husband is taking the day off. He decided we are going to the Keg so he can try the Thanksgiving meal himself! Haha! I’m so thankful he will be off this Thanksgiving to be with us and we are both happy that he can eat his turkey, I get my steak and we both get the day off! 😉
Anyway, back to the recipe! This week I cooked a whole chicken in my Instant Pot for 2 chicken meals and to make homemade chicken broth. I pulled and used all except the breast meat for this recipe. I got about 2.5 cups of meat. I reserved the breast meat for my Chicken and Rice recipe I’ll share on another post real soon.
This Creamy Chicken a la King comes together quickly in about 30 minutes if you use cooked chicken. If you need to cook your chicken, it still should only take about 45 minutes.
Chicken a la King
- 1 green pepper, diced
- 1 yellow onion, diced
- 1/2 cup butter
- 1 cup flour
- 1 lb cooked chicken, shredded I used the meat from cooking a whole chicken except breast meat I reserved for another meal. I got about 2.5 cups of shredded chicken.
- 12 oz frozen mixed vegetables
- 3 cups milk
- 2.5 cups water
- 1/2 tsp black pepper
- 3 tsp better than boullion chicken boullion
- Cook chicken, shred or chop and set aside.
- In a large pot saute' onion and green pepper in butter until tender.
- Turn down heat and blend in flour, and pepper. Stir until mixture is bubbly.
- Stir in water, milk and bouillion. Boil & stir one minute. Turn down heat.
- Add chicken and mixed vegetables. Cook on medium low until heated through.
