Ok so we are only 5 days into the New Year and I must confess, I have blown it already! I know, I know, what a disgrace! Coffee is obviously a serious weakness for me. The good news is I have not gone back to adding honey at this point. However, I have slipped on the “drinking black for any additional coffee throughout the day” thing though. You see, all 5 days I have had additional cups of black coffee and I just can’t get used to it.
So I’ve been busy this morning trying to find a healthy, tasty alternative to the creamy, sweet honey tasting coffee I’m used to. I searched the internet and drank 3 cups of coffee just in the last 2 hours testing different recipes. Yeah, it’s on and poppin’ over here! Haha! But here is what I came up with-a creamy tasting, spiced coffee with *just barely* a hint of sweetness. It is still not my favorite way to drink coffee, but it does help curve the craving, keep me on track to lose weight & gives a nice boost of energy.
Recipe adapted from Mr. Coffee’s Blog
1 Cup Brewed Coffee
1 Tbl Coconut Oil
1 Tsp Prepared Spice (see below)
Brew coffee with 1 teaspoon of Prepared Spice and your coffee grounds. Add to blender with 1 tablespoon coconut oil. Blend until creamy & frothy. Add cubes of ice for blended iced coffee. Enjoy!
3 Tbl Cinnamon
1 Tbl Ginger
1/2 Tbl each of Allspice, Clove & Nutmeg
Mix all together in a small jar and use 1tsp per serving, or to taste.
