Instant Pot Bourbon Chicken & Rice with Broccoli

 
This Bourbon Chicken recipe is sweet, easy, and delicious! Some say Bourbon Chicken is made with Bourbon and others say it is named after a street. This recipe is Bourbon free so we will say it was named after a street. This is a whole foods version that substitutes with coconut aminos instead of soy sauce in the built in teriyaki sauce. If serving with broccoli as shown, cook separately on the stove to your desired tenderness. The chicken and rice will be cooked at the same time in the pot using the pot in pot method.


Instant Pot Bourbon Chicken & Rice

 
Ingredients
 
Bourbon Chicken
1 lb boneless chicken breast, cut in pieces
1 cup chicken broth
1/2 cup water
3 Tbl honey
3/4 cup brown sugar
1 tsp ginger
1 1/4 tsp garlic powder
1 tsp mustard
2 Tbl minced onions
 
To Finish sauce after cooking
2 Tbl arrowroot or cornstarch
2 Tbl cold water
 
Rice
1 cup white rice
1.5 cup water
 
Instructions
 
1) Cut chicken in bite size pieces
2) Mix together Bourbon sauce ingredients to minced onions
3) Put chicken pieces in Instant Pot, pour sauce over chicken
4) Place trivet rack on top of chicken
5) Put rice and water in Pyrex 7 cup round bowl, center on top of trivet in pot
6) Seal lid & set to Pressure Cook 8 minutes
7) Natural Release 10 minutes
8) Carefully remove trivet and bowl to plate (bottom will be messy)
9) Mix together arrowroot and cold water, pour into pot. Sauté 1-2 minutes stirring until thickened.
