Wheat Belly

I’ve been playing around with Einkorn for a couple of years now. Admittedly I get frustrated with the extreme stickiness of the dough, recipes not turning out right, & sometimes I’m just lazy on the bread making. So I end up buying bread at the store instead of making it at home like I should.

My last trip to the library I ran across the book *Wheat Belly by William Davis & remembered that I had heard raves about it. So I thought it would be perfect in motivating me to *finally* bake all my own bread products with Einkorn. Last week I started reading and it & boy oh boy am I motivated now!! It is a fascinatingly scary book! 
If you suffer from diabetes, need to lose weight (visceral fat too), have stomach problems, osteoporosis, mental or skin issues, just to name a few of the conditions caused by modern wheat, you should read this book right away and get off the modern wheat as much as possible ASAP. It is hybridized wheat, meaning the genetic make up has been tampered with. Obviously this has very undesirable effects! The book talks about 2 slices of this bread spiking your blood sugar more than 2 tablespoons of table sugar. Consistent blood sugar spikes are extremely dangerous to our overall health for a number of reasons. 
If you consume breads, rolls, tortillas, pastas, burger & dog buns, or other bread products you are more than likely eating modern wheat. Even Organic modern wheat is hybridized.
Don’t worry you can still eat bread & pastas! Just use Einkorn! Einkorn is the original wheat. It has about 30% more protein, more antioxidants, B Vitamins, and essential dietary and trace minerals. A bit of a learning curve but it’s healthy, delicious and rewarding to make your own breads at home. And you will be helping your family to stay free of the many harmful health hazards of consuming modern wheat. Isn’t this part of our job in being a keeper of the home?

  1. I'm glad I stumbled across this today. I have a bunch of einkorn and some sourdough starter in my kitchen right now, but have been to lazy to get it all going. Ive heard about that book, but havent read it. My family os full of allergies, asthma, autoimmune diseases, etc, so I know we need to avoid modern wheat like the plague. Somerimes it just feels so hars. We were gluten free for several years while reversing my sons vaccine damage and healinf his ASD, so I know we can do it. It's so much harder to get back on the wagon once you've fallen off!! Thanks for sharing and encouraging the rest of us.

Sounds like your family could really benefit from making the change. It is hard to get back in but you can do it! Once you get the hang of Einkorn it is much better tasting, better texture, and no weird ingredients like some of the gluten free items. It will be so worth it!
